Value can be added to fresh fruit by grading, sizing, ripening or packaging the fruit in appropriate ways. Growers can also achieve higher returns by targeting their maximum production to seasons of the year when higher prices are expected.

Speciality or gourmet bananas have a small market, but command higher prices – either traded internationally or, for instance, where there is a local tourist industry.

The use of guaranteed production techniques can also add value. Common labels include organic and fair trade.
